A 45-year-old woman presents to her gastroenterologist with complaints of persistent dysphagia despite a 12-week course of omeprazole 40 mg daily. She was diagnosed with EoE 6 months ago and initially started on a dairy and wheat elimination diet. She tried a topical steroid but mentioned she was having difficulty sleeping while taking it. She then was switched to a proton pump inhibitor (PPI) after being unable to stick with the elimination diet, and because of that did not have an endoscopy on the diet.
